This honey is very rare in France. Holly is a shrub that is found mainly in South America and Canada. Its flowering which takes place during the month of June is very short, at most about ten days. The holly flower is white and very melliferous.
This honey has a coppery colour and a creamy texture. Its flavour is woody and ends with a slightly caramelized note. It is known for its energizing and diuretic qualities.
